POTATO ROSTI

Ingredients:

4 large potatoes

1 tbsp vegan butter

Salt and ground black pepper

Method:

1.Peel the potatoes and use a food processor to shred them roughly. Squeeze out the shredded potato on to a clean dish towel or put into a colander to drain. Divide the mixture into eight spoonfuls.

2.Melt the butter in a pan on a medium heat. When it’s very hot, add the potatoes and press down and shape them with a fork, creating 8 small cakes. You may have to do this in batches. Season with salt and pepper. Cook for 5 minutes until the upsides of the cakes turn golden brown, then turn them over and cook the other sides until they are the same colour. Serve immediately.
