Ingredients:

1 vegan egg
3 tsp vegan butter
2 tbsp instant polenta
2 tbsp plain (all-purpose) gluten free (optional)
½ tsp baking powder gluten free (optional)
2 tbsp vegan chocolate chips
Method:
1.preheat the oven to 180°/C/160°C fan/350°F Gas mark 4.
2.In a bowl, whisk the eggs with sugar then add the butter and mix well.
3.Add the polenta (without cooking it before) flour and baking powder.
4.Once the mixture is smooth, take a tablespoon of dough. Quickly forming a ball with your fingers and place on baking sheet. Flatten with a spoon to form the cookie.
5.Space the cookies well on the sheet. Cook for 15 minutes, then add the chocolate chips ( they should stick to the cookies but not melt).
6.Remove from the oven and transfer to a wire rack to cool.

When ever a food triggers a hostile response from the body's immune system the result is an allergy attack, which on occasion may be life-threatening although it's relatively simple to identifying problem foods, avoiding them completely is not always easy. My journey with allergies hasn't been easy "but" it has helped me to becomes a stronger person and would like to share and encourage others to never get discouraged, there's always light at the end of the tunnel if you keep persevering.
