Ingredients:

250ml 1cup Polenta (cornmeal)
¼ tsp nutmeg
¼ tsp cinnamon
1 tsp vanilla extract
20 fl oz/ 2 cups of water
250 ml/ 1 cup vegan milk/or single soy
Or oats cream or coconut milk
Pinch of salt to taste
60ml/ ¼ cup sugar or sweeten to your taste
Method:
Boil your water in saucepan or if you already have water boiled from the kettle then pour into your
Saucepan under a low heat. While your water is a low heat boiling or getting ready to boil.
Prepare your polenta/ cornmeal in a small bowl with your milk, cinnamon, nutmeg, salt, vanilla, and
Sugar mixing altogether makes sure there’s no lumps, should be nice and smooth then add to your boiling water. Keep stirring and gradually the mixture will start to get thick, if it’s too thick then keep adding milk or cream which ever you like, either way if you like your porridge thick no need to make it any thinner. If you’re any thing like me who likes her porridge creamy and thin then I would choose the cream instead of milk. If too thin then add more polenta by mixing some with milk in a cup depending on how thick you like it to be! Then continue to stir until 15-20 minutes your porridge is ready to eat. Serve with raspberries or blackberries or strawberries.
