1 cup of green lentils
1 fresh small lettuce, shredded
1 large avocado, cut in small chunks
Fresh coriander (cilantro)
Extra virgin oil
1 tbsp cider vinegar
Pinch of salt
Preheat saucepan with water and follow the instructions on the packet for lentils. Until cook and drain
Wash and shred lettuce in small chunks
Peel the avocado and cut them up into fine slices
Wash the mint and cilantro and place in a small blender with olive oil and vinegar with a pinch of salt to make a vinaigrette.
Combine the cook drain lentils with avocado and lettuce and pinch of salt and served with the vinaigrette sauce.
